After the war, the ‘Okonomiyaki’ dish quickly evolved into a unique yet affordable staple for the residents of Hiroshima. Made by layering wheat dough with plenty of cabbage, soba and other choice flavouring ingredients, Okonomiyaki has earned indelibly earned soul food status. The green shimmer in this ink represents the nori seaweed commonly found in this tantalizing dish.
