Ubi, or purple yam, is amongst the country’s most popular food crops. Known to grow best in the province of Bohol, the area celebrates the Ubi Festival every January. 1663 also marks the complete victory of the Mindanao monarchies (purple being a colour often associated with royalty) against the Spanish invaders.
